Happy Apple Day!

Did you know that yesterday was official Apple Day in Lincoln, Nebraska. Actually, I just made that up. It was very "appley" around the house yesterday though, as Catherine, Amy and I headed out into our neighborhood for a bunch of free apples. We've been seeing a very heavily laden apple tree on our walks through our neighborhood, and it looked like the apples were just falling and going to waste. After repeated attempts to reach the owners of the house, I finally connected and got the "ok" to take as many apples as I'd like. We ended up with 4 grocery bags full of somewhat bruised and bug laden apples, but after spend a few hours on the back patio table removing the bad and keeping the good (ooooohh.... there's a great analogy of God and us in those apples and it's just waiting to be shared).
We were up until about midnight, but we now have plenty of applesauce in our freezer, a few jars of apple butter in the fridge and a HUGE pan of apple crisp just waiting to be eaten. Thanks for the apples neighbor!!! Nebraskans really are some of the friendliest people I know.
